crunchy macaroons

1.5 cups puffed rice(21g)
1.25 cups Organic Textured Soy Protein(70g)
2 egg whites
2 tablespoons sugar(25g)
1/8 teaspoon almond extract
-combine all ingredients. With damp fingers, shape into 1-1/2-in. mounds on parchment paper-lined baking sheets.
-300°c for 20-25 minutes or just until edges turn brown. Remove to wire racks to cool.
